Readers of this blog know just how much I adore traveling. I’m a big believer that travel is about the people, the places discovered and small moments enjoyed, so one can imagine just how many of those we had over the span of ten days from Reno, Nevada, to Tiburon, Mill Valley, San Francisco and wine country. A vegan take on the traditional raspberry oat streusel bar, these bars were far too addicting – in a good way. Though listed as a breakfast recipe, I found it to be more like dessert, or a sweet treat to enjoy with an afternoon coffee or tea break.
I discovered the recipe from Choosing Raw. Originally listed as blueberry oat bars, I made the swap for raspberry preserves that I already had at home. My favorite jam comes from Bonne Maman – from the raspberry, to blueberry, strawberry and fig, I haven’t tried a jam from this company yet that I didn’t like.
The recipe is fairly easy and takes advantage of ingredients that you probably already have at home. The only challenge I had was with the vegan streusel topping. I’m not quite sure it came out right, but the end result was delicious, prompting compliments from my roommate.

It’s rare to be in London during a proper heat wave, but that is exactly where I found myself this past July. Mid-way through the busiest summer of my life, I snuck off to London for a little R&R. From admiring the roses in Regent’s Park, to meals with friends and a little shopping, this was exactly the mid-summer break I needed. Who doesn’t love a beautiful piece of jewelry – or two, or three – to bring an outfit to the next level? With a highly curated and creatively sourced jewelry collection, friends frequently compliment and ask where I get certain pieces. A light bulb went on to share some of these more asked about pairings and offer links to the same or similar pieces. The pieces range from various price points, but because its yours truly, you know there will be a number of good deals mixed in!
The first fabulous jewelry pairing comes from Tahari and Ralph Lauren. The chic earrings from Tahari were gifted to me on my birthday by my fabulous roommate. Their classic style has clearly passed the test of time, as I found them on Amazon still at a good price (affiliate link). While the earrings have numerous options to be paired with, I do like this simple Ralph Lauren tortoise cuff, especially during the workday. On the weekend, the cuff makes it easy to stack and layer in complimentary bracelets to make it more fun and on trend. Originally gifted to me by my mother on one of her jewelry drawer clean outs (best day ever for yours truly), I couldn’t find the exact cuff online, but I did find a very similar cuff from Ralph Lauren on Zappos, but with a fabulous gold pave band in the middle.

Shredded pork tenderloin seasoned with Asian spices and cooked until tender in a slow cooker is the shining star of this recipe. Add the complementing ingredients of black beans, shredded carrots, sliced cucumbers, a dash of spicy salsa and wrap it all in a tortilla and you have a winner. Oh, and did I mention that it’s incredibly easy to make? Yep, this is precisely why I keep coming back to this recipe.
