Cooking for one can sometimes feel a bit blasé. If you buy too much food at one time, you fear that much of it will go to waste. However, the thought of eating the same thing everyday can also get old – quickly. The solution? To get creative with how you take leftover ingredients in your refrigerator and make them into a range of yummy dishes. One of my regular go-to’s is to whip up a grain, veggie and fried egg bowl. Simple, healthy with just the right amount of indulgence – not only can you make it in a flash, but it tastes delicious.
I have a confession to make. I splurged a bit while shopping in Boston. I’ve been living the frugal life for a bit, but the sales in America are always just too good to resist. With almost everything I purchased about 30-50% off, sometimes a girl just needs to update her wardrobe a bit.

As I sat down to write this post, I was feeling a bit grumpy about 2017. In comparison to other years, for whatever reason, I kept telling myself that 2017 just hasn’t felt as special or as fulfilling. However, a powerful and somewhat surprising thing happened as I went through my photos from 2017. I realized that I was focusing on a handful of tough/hard things that I went through in 2017 and not the bigger picture of the many amazing moments and accomplishments that also happened. Going through this exercise gave me so many reasons to feel grateful for the life I have and what I accomplished in 2017. It also gave me the motivation I needed to keep going and striving for my goals in 2018. Here’s why.
Every so often, an evening takes you by surprise. Such was the case with a recent dinner at City Social. Between beautiful views of the city, artfully styled entrees and delicious wine, it’s been awhile since a Thursday night dinner has been so elegant – for this blogger at least!
