I love getting my morning’s jumpstarted with a refreshing, nutritious smoothie. I found this one from a blog I love, Kathy’s Happy Healthy Life. The ingredients are simple yet compelling with matcha, watermelon, banana and almond milk. I couldn’t resist giving it a go!

Today was an amazing day – Dunkin’ Donuts opened a central London location adjacent to the Baker Street underground!
As a former employee and huge fan, having a taste of home is pretty exciting. Dunkin’ even has a proper Iced Coffee with Splenda. None of this Iced Americano or hot coffee poured over ice – the real deal!
And yes, there are donuts. Lots and lots of decadent donuts – I was impressed by the flavor options!
While you never want a good weekend to end, a delightful brunch always helps close out several days of leisure on a high note. Inspired by my dear friend G who was visiting, we decided to try Tatte Bakery & Cafe in Kendall Square. It’s been on my radar for some time and after a delightful meal, I’m a little ashamed that I haven’t come sooner.
I probably shouldn’t admit this, but I consume a greek yogurt parfait way too often (e.g. multiple times per week). Guess that’s what happens when you’re super busy during the work week and don’t have much time to cook. My favorite combo? Fage 2% greek yogurt with cinnamon stirred in, a gala apple (chilled in the fridge) and a little museli or granola to top it off. There’s also the occasional drizzle of raw agave nectar (yum).
Recipe: Quick & Healthy Kale Salad with Butternut Squash, Edamame, Apple Cider & Dijon Mustard Vinaigrette
This salad is one of my go-to’s when I want a quick, healthy lunch. Combining items I already have in my apartment, plus a teensy bit of prep work, this salad comes together in a flash. I take chopped kale, roasted butternut squash, edamame, peas, feta and dried cranberries and toss it in a homemade apple cider/Dijon mustard vinaigrette. The end result is so delicious and a great way to add extra veggies into your diet.
