Recipe: A Fast & Easy Thai Curry

In self-isolation, I am cooking a ton and making up lots of new recipes, like this Thai curry. Super fast and easy to make, I hope it inspires you to cook new things during this time at home!

The Ingredients:

  • 1 heaping teaspoon red Thai curry paste
  • 1/3-1/2 cup of coconut milk
  • 1/2 cup cooked rice (I used white rice)
  • 1 chicken breast, chopped
  • 1/2 cup green beans, chopped
  • A handful of snap peas
  • Dashes of paprika, coriander, cumin, salt, and black pepper to taste
  • Squeeze of fresh lime

Instructions:

  • Put the Thai red curry paste and coconut milk in a frying pan on low heat. Stir together to incorporate
  • Pour in coconut milk
  • Stir in paprika, coriander, cumin, salt, and black pepper
  • Add in chicken, green beans, snap beans and raise heat to medium
  • Allow curry to simmer until warmed through.
  • Pour into a bowl, squeeze with fresh lime and enjoy!
