In self-isolation, I am cooking a ton and making up lots of new recipes, like this Thai curry. Super fast and easy to make, I hope it inspires you to cook new things during this time at home!
The Ingredients:
- 1 heaping teaspoon red Thai curry paste
- 1/3-1/2 cup of coconut milk
- 1/2 cup cooked rice (I used white rice)
- 1 chicken breast, chopped
- 1/2 cup green beans, chopped
- A handful of snap peas
- Dashes of paprika, coriander, cumin, salt, and black pepper to taste
- Squeeze of fresh lime
Instructions:
- Put the Thai red curry paste and coconut milk in a frying pan on low heat. Stir together to incorporate
- Pour in coconut milk
- Stir in paprika, coriander, cumin, salt, and black pepper
- Add in chicken, green beans, snap beans and raise heat to medium
- Allow curry to simmer until warmed through.
- Pour into a bowl, squeeze with fresh lime and enjoy!
